Today I decided to cook lunch. Now all of those who know me, know that I have poor cooking skills at best. However lately I’ve decided to learn how to cook, mostly breakfast food, but still in counts. Today however was different. After my sister bailed on making lunch and I was starving and in no mood to have a cheese sandwich for lunch, I took it upon myself to be the chef for the day. The end result was a batch of large tuna burgers, that were perfect (not under-cooked or burnt, which are the cases when I cook anything). Tasty, delicious and filling!!

Strawberries with whipped cream for dessert, YUM! 🙂

2 cups of potatoes, boiled and mashed

1 chopped onion

2 tablespoons chopped garlic

1 tablespoon olive oil

3 tablespoons chopped parsley

1 tablespoon chopped coriander

2 cans of tuna, drained

1 beaten egg

¼ teaspoon chili powder

Salt and pepper

1 cup oil

3 cups breadcrumbs

  1. In a pan, heat the olive oil and sauté the onions and the garlic until soft
  2. In a medium bowl, mix the potatoes with the egg and add cream to soften
  3. Add the tuna, parsley, coriander, chili, salt and pepper, onion and garlic and some of the breadcrumbs mix well until the mixture isn’t too soft
  4. Shape mixture into patties
  5. Coat the patties with the rest of the breadcrumbs
  6. Put the oil in a frying pan
  7. Place the patties in the pan and flip over until both sides are golden brown
